Ghostbusters S’mores Chocolate Cake
With Halloween coming up I thought it’d be fun to post this super fun Ghostbusters S’mores Chocolate Cake that I made for my son’s 3rd and 4th birthday (he loved it so much). I will post another blog with pictures of the party, so you can throw a “ghostly” party too… This was super easy and with the marshmallow cream. Any errors are easily fixed due to the consistency of it being like glue, ha, ha…
I used Betty Crocker Super Moist Devil’s Food Cake Mix, baked and cooled.
For the filling I pulled ideas from a few different recipes, but made own version:
- 16 whole graham crackers, crushed
- 4 tablespoons unsalted butter, melted
- Pinch of sea salt
- (2) 16oz containers of marshmallow cream
- Vegetable oil for spatula to spread filling.
Cake: Bake as directed on box and cool. I used (2) 13×9 baking pans.
Filling: Preheat the oven to 350 degrees. Toss the graham cracker crumbs, melted butter and salt in a bowl until well combined. Spread out on a baking sheet. Bake, stirring occasionally, until toasted, 8 to 10 minutes; let cool.
To assemble the cake I looked at the Ghostbuster logo, and tried to do the best I could. I started by using a long serrated knife cutting out the bottom layer first. Using a lightly oiled offset spatula, spread marshmallow cream on top, stopping about 1 inch from the edge (if the marshmallow cream is difficult to spread, microwave 10 to 15 seconds to soften). Sprinkle the graham cracker mixture over the marshmallow cream (Mine was pretty thick, which turned out great).
Place top layer of cake on top of bottom layer and with the serrated knife follow the bottom edge of cake for a template. Use the rest of the marshmallow cream for frosting. Using the Ghostbusters logo again draw the face.
