This Creamy Sweet Potato and Butternut Squash Soup Recipe is a now a new family favorite for sure!!  The red pepper leaves a hint of heat, while the coconut and sweet potatoes keeps it sweet.  The kids loved it.  Todd took it to work the next day and he said it was even better! Who knew my family would all love the Creamy Sweet Potato and Butternut Squash Soup so much, that they all agreed I could make this every week! Luckily with spring approaching it’s still fair-game for crock-pot cooking.

  1. 1. Combine sweet potatoes, squash, onion, half of broth and butter in 4 1/2 -quart slow cooker. Cover; cook on HIGH 4 hours or until vegetables are tender.

  2. 2. Process sweet potato mixture, 1 cup at a time, in food processor or blender until smooth. Return to slow cooker. Stir in remaining half of broth, coconut milk, cumin, and ground red pepper. Heat for 10 minutes.

  3. 3. To serve, ladle into bowls and garnish with green onions (optional).
